For Batch 006, Seelbach’s takes Indiana bourbon and gives it just 10 days in a third-use toasted Amburana barrel. That short finish allows the exotic Brazilian wood to bring its signature cinnamon and baking-spice character without completely overpowering the bourbon underneath.
Tasting Notes
Nose: Fresh cinnamon rolls, vanilla frosting, buttery pastry and warm spice.
Palate: Dried cherry, banana bread and toasted almonds with rich bourbon sweetness.
Finish: Long and layered, moving between confectionary sweetness, cigar box and aged tobacco.
